Easy Vegetarian Meals Fresh herbs are sautéed with garlic in olive oil, then cooked with chickpeas, zucchini, mushrooms and tomatoes fairly traditional bolognaise except I use Quorn instead of mince. I have served it to a few people now and they didn’t even guess it was vegetarian.Fed-up with tomato and cream based sauces on you pasta Try this pumpkin one that one of my vegetarian friends put me onto. Great on gnocchi too.The perfect Napoletana sauce for your pasta It is so quick and easy think it is the fresh basil that makes it so great simple Asian style salad that can be made as a main meal or as an appetiser. If you do not have the time to make the sauce your favourite store bought sauce can be substituted  tasty and versitile vegetarian tofu patties that can be eaten as a snack or served with vegetables and rice to make a whole meal.you are looking for a different way to cook eggplants this is a nice variation, I love the heat of it but you can tweak the chilli bean paste and fresh green chillies to your taste.
Although suitable as a main I often use this as a side dish. The three types of mushrooms, pioppino, black and straw, are stir fried with tofu then joined by oyster sauce.
